Being a vegetarian/vegan in Texas (with cowboys, ranchers, rural country folks, and barbecue restaurants on nearly every corner) has its troubles.
I believe that.
@JustGeorge has inspired me to make chilli con carne tonight. It will have beans and vegies and carnivore meat.
Chili is meant to have veggies.
My brother and his family are almost pure vegetarians. I am sure that they do cheese. I am not sure about eggs. But I cannot imagine her food without onions. If it is digestive issues than I am sure that they would never be in a salad for you.

And it is rather warm here today. Maybe a real Caesar salad with grilled salmon. That sounds like a winner.
Its not a digestive issue for me, I just can't stand the texture, and I'm not terribly fond of the taste.

I don't grumble if I'm company somewhere. I just tell them I'm vegetarian, suffer down the small onion pieces, pick out anything that's too large for me to reasonable eat without making faces.

My chilli was probably more of a curry. I tried putting sweet potato in because I was given a heap and it turned out OK. A TexMex purist would probably have a heart attack.
A year or so ago I tried to better familiarize myself with the regional cooking of the US... I actually found chili to be the most universal food. I hear our national dish is hamburgers, but it really oughta be chili.

The cool thing was each region puts its own twist on it. One of the oddest ones(in my opinion) is Cincinnati's:

I made cheeseburgers for dinner. Mine was a honey-goat cheese burger, with tomatoes, caramelized onions, spinach and a balsamic reduction, on toasted potato buns.

And tater tots.

Simple, pork steaks, chips snd corn, followed by fresh fruit snd ice-cream.

The steaks are carved from a hind quarter pig i bought this morning.

Intentionally left-over moong dal curry and basmati rice.

Tonight, I'll likely be throwing something together with some random ingredients I have lying around. Vegetable broth, basmati rice, lentils, chilis that are about to turn, mushrooms, garlic, ginger, and some random spices.
