In honor of brother Odion's quest to become vegetarian, I thought I would start this thread. Also, I like the irony of it coming from a proud carnivore. :D To start us out I thought I would offer a Cajun dish that is popular in my house.

Maque Choux

4 C frozen corn or kernals from 8 ears of fresh corn
2 T veggie broth or balsamic vinegar
1 medium onion, chopped (½ C)
1 small green bell pepper, chopped (½ C)
1 medium tomato, diced
¼ t ground or flaked red pepper
¼ t salt
¼ t ground black pepper


In a 3-quart saucepan, cook onion and green pepper in veggie broth or balsamic vinegar about 5 minutes or until tender. Stir in corn, tomato, salt, black pepper, and red pepper. Cover and cook over low heat about 20 minutes or until corn is tender. Season to taste.

6 side-servings, each 175 calories: 6% from fat (1.4 g), 82% from carbohydrates (41.4 g), 12% from protein (6.1 g). Sodium 146 mg, Fiber 1.2 g.

India is the only country where *Vegetaranian* has a different meaning.
The following recipe is a very popular * vegetarian* dish in India.
The recipe!

Palak Paneer Recipe

Ingredients :
*Paneer cubes 15-20 .
Onion chopped 1 No.
Garlic clove Chopped. 2 Nos
Salt To taste
Coriander Powder 1 Tsp.
Cumin Powder 1 Tsp.

Sugar 1/4 Tsp.
Oil 1 Tsp.

For Gravy :

Spinach 1 bunch.
Ginger small Piece 1.
Cinanamon small stick 1.
Green Serrano chillies 2 Nos or to Taste.
Onion small Chopped 1 No.
Tomato 1 NO

For Garnish :

Grated Cheese 1 Tbsp.
Cream 1 Tbsp or To Taste

Method

Wash & drain the water from Spinach. Chop them coarsely.

In a pan bring to boil or microwave on high for 8 minutes all the ingredients for gravy.


Cool & grind them coarsely to Paste.

In the same pan heat the oil, fry onions till translucent. Add Garlic & fry briefly. mix all the spice powders & stir.

Add the Spinach Paste & let cook for a couple of minutes till combined. Add the Paneer cubes cook for 2 minutes & switch off the flame.Adjust the seasonings & Serve Garnished with Cream & Grated Cheese on top.

*Paneer these days is readily available in all Indian Grocery stores. or substitute with firm Tofu which is more healthier.

For your info:
Tofu is meade of soya bean milk
Paner id made from cow or buffalo milk.
Tofu is Chinese whereas Paneer is Indian.

Ingredients:

• 2 lbs Fresh green beans
• 1 Large chopped onion
• 4 Potatoes
• 4 Ripe tomatoes
• 3 Sliced onions
• Some chopped garlic
• Chopped parsley
• Pinch of sugar
• Salt
• Pepper

Preparation:

Clean and wash the beans. Warm the oil in a pot and simmer the onions and throw in the rest of the ingredients, except for the potatoes, with a little bit of water and leave the beans to slowly cook for 20 minutes. Cut the potatoes in 4 wedges and put them in the pot last. If needed put in more water and let the food boil for a while. Serve hot.

(That's the recipe as I received it. I add garbanzo beans and more tomatoes.)

Colcannon

Ingredients:

• 6 large potatoes
• 1 head of green cabbage
• 4 large onions
• salt & pepper
• 1 cup cream (optional)

Preparation:

Peel potatoes and cut into cubes. Chop cabbage, removing stalk. Peel onions and cut into cubes. Put everything into a large pot and boil together till the potatoes are cooked through.

Remove from heat, drain, and mash everything together. Salt and pepper to taste. Transfer to a deep baking dish and bake at 350º until colcannon just begins to brown.

If a vegan dish is not required: Add a cup of cream to the mixture when you mash it, and butter the baking dish before putting the colcannon into it. Serve with butter.

Choban Salatasi

Salad Ingredients:

• 2 large tomatoes, peeled, seeded & diced
• 2 cucumbers, peeled, seeded & diced
• 3 small green peppers, or wax peppers
• 6 radishes, thinly sliced (optional)
• 3 green onions, white part only sliced or 1 white onion sliced into rings
• 1/2 cup flat Italian parsley, finely chopped

Dressing Ingredients:

• 6 tablespoon Lemon Juice
• 1/4 cup olive oil
• Salt
• Pepper

Preparation:

Cut all vegetables into similar size, diced. Combine all ingredients in bowl. Mix dressing and gently toss just before serving salt and pepper to taste.

thiis is pizza from m y meal wheel. i am not vegeterian diet but much meat make me sick. i like this pizza and it dont have meat i n it.i dont like the broccoli but this tast ok i n pizza.

1 tsp olive oil
2 chopped tomatoes
1 cup fresh broccoli floret
1 cup sliced yellow squash
1 cup slice mushrooms
1 medium sliced red bell pepper
1 large mince garlic clove
1 15 inch pizza crust dough, frozen
1 cup skim shredded mozzarella
1/4 tsp black pepper
1/4 tsp red pepper flakes

Directions
1 Preheat oven to 170 Degrees C. Add olive oil to a large nonstick skillet over medium heat. Add broccoli, squash, mushrooms, tomato and red bell pepper; sauté for 3 minutes. Add garlic and sauté 30 more seconds.
2 Place pizza crust on baking sheet. Spread the veggie mixture evenly over the pizza. Sprinkle with cheese, black pepper and red pepper flakes.
3 Bake pizza in oven for 20 minutes or until cheese begins to lightly brown.

well my favorite vegan meal is
a small salad as appetiser
then as main course pizza (my prefrence is to one with hot peppers)
and as side dish a vegan quiche
then as dessert strawberries with slices of banana

This is an old favorite that I have recently redesigned for vegetarians and is now a huge hit at all our parties. Note, not all refried beans are vegetarian so check the labels.

Charlie's Mexican Chili Cheese Dip

2 cans of vegetarian chili (I use Amys)
2 cans refried beans (Old El Paso)
1 block Mexican Velveeta
1 jar Picante sauce (I like Pace Chunky)

Combine ingredients in a big pot and heat until cheese is completely melted and mixed in. Heat slowly and stir continually. Serve with tortilla chips. Feeds many.

I don't eat a lot of meat, and I usually make up the protein difference with eggs. I've found that for scrambled eggs or an omelette, you can use one whole egg and then just the whites of the rest of them, and it removes a lot of cholesterol without having that bland taste of pure egg whites. Here's how I make omelettes:

1 whole egg
2 egg whites
Splash of milk
Salt and pepper
Veggies, cheese, sour cream, whatever you like in an omelette

If you're using a crunchy vegetable like peppers or onions, saute them in olive oil in a frying pan first until they're firm but not crunchy. Beat the eggs and add the milk, salt and pepper. Then put the veggies in a bowl and pour the egg mix into the same pan; cook on medium high without mixing until it's cooked about halfway through. Add the filling and fold in half; cook on low for about five minutes. Simple, fast and healthy!

My wife came up with this for a nice side dish.

1 can black beans
1 can white shoepeg corn
1 can diced tomatoes and chilies (Rotel)

Cook all together and season to taste. For an entre you can serve over a bed of rice.

See, I just found out before I wrote it that we've got like 4lbs of frozen minced beef in the freezer, for some reason.. :run:

I don't recommend quiting meat cold turkey anyway. Phase it out. If you normally eat meat 7 days a week, drop it down to 5 for a couple weeks, then 3 for a couple then 1. And when ever the craving is really strong, go ahead and have some meat without feeling guilty. It's not an addiction that will reassert itself if you fall off the wagon. But feeling guilty about it will make it harder to transition.

Ooo, sounds like a plan! :D (Though I might not eat any of that mince beef, because the wife's annoyed me!)

I'm adding more and more veg to my dishes though. I actually ate, for like the first time ever, a proper vegetarian dish, and I enjoyed it quite a lot!

The majority of Indians where I live are from the Punjab area, so I expect I'll get mostly Punjabi recipies. I'll be sure to ask around for others, though :D

(BTW, what is kedgiree or something like that? I heard that recommended to me)

Within my family , we are not big meat eaters. Since my daughter decided to become vegetarian at age ten, I am very careful to include several balanced vegetarian dishes on the table. Some of the family favorites are thick soups. I make spinach soup with navy or northern beans and a cup of rice or bowtie pasta. Simmer and season with salt, squeeze of lemon, white pepper, vegetable boullion, and allspice. If you like, you can add cubes of parmaesan cheese before serving.
Another favorite recipe is sauteed slices of eggplant layered on top of pita bread chips, then cooked tomato or pasta sauce, and finally a layer of plain yougurt mixed with a little bit of minced garlic and salt. Garnish with toasted nuts and carmelized onion slices.

Not too sure what Kedigiree is, but South Indian food is simply amazing. I am a Gujarati, so look around for Surti Cuisine.

Next time i make Dosa, ill post some pics online :D

I've known some vegetarians who still eat seafood. Their choice to become vegetarian was not about religion but simply a desire to remove beef and pork from their diet.
