Black beans? I've always been too scared to try them!! Are they goodness? What do they taste like? :D

Black beans are a nice change. Don't know how to describe them other than different from regular beans. We mix a can of black beans with a can of diced tomatoes and chilis (Rotel). It's a great side dish or can be a main dish when put on a bed of rice.

I can't eat peppers, but I bet that would go great with the canned fire-roasted tomatoes at my local supermarket, and some mushrooms.

The great thing about any kind of beans is that you can eat them alone, in a soup, put them on a salad, mash them up and made a burrito, etc. They're very versatile.

Dal Makhani - Creamy Indian Lentils

I had this last night at an Indian restaurant and must make it myself! It was the best part of the entire meal, which was all good.

Ingredients:

1 tablespoon vegetable oil
2 cups onion - thinly sliced
1 cup brown rice
1 tablespoon curry powder
2 teaspoons mustard seed
1 teaspoon salt
1/2 teaspoon black pepper
4 cups water
1 cup lentils
1/3 cup kidney beans
1 cup cilantro - chopped
1/2 cup sour cream (or plain yogurt), light

In a large Dutch oven, heat olive oil over medium high heat. Add onion and saute until browned (10 minutes). Add rice, curry powder, mustard seeds, salt and pepper. Saute 1 minute. Add water, lentils and kidney beans, bring to a boil. Cover, reduce heat and simmer for 1 hour. Remove from heat. Stir in cilantro and sour cream.

thiis is pizza from m y meal wheel. i am not vegeterian diet but much meat make me sick. i like this pizza and it dont have meat i n it.i dont like the broccoli but this tast ok i n pizza.

1 tsp olive oil
2 chopped tomatoes
1 cup fresh broccoli floret
1 cup sliced yellow squash
1 cup slice mushrooms
1 medium sliced red bell pepper
1 large mince garlic clove
1 15 inch pizza crust dough, frozen
1 cup skim shredded mozzarella
1/4 tsp black pepper
1/4 tsp red pepper flakes

Directions
1 Preheat oven to 170 Degrees C. Add olive oil to a large nonstick skillet over medium heat. Add broccoli, squash, mushrooms, tomato and red bell pepper; sauté for 3 minutes. Add garlic and sauté 30 more seconds.
2 Place pizza crust on baking sheet. Spread the veggie mixture evenly over the pizza. Sprinkle with cheese, black pepper and red pepper flakes.
3 Bake pizza in oven for 20 minutes or until cheese begins to lightly brown.

Vegetarian Spaghetti Bake

1 pound Spaghetti (any pasta is acceptable as long as it isn't egg noodles or something weird)
1 bag frozen spinach
1 pound ricotta or cottage cheese
1 can or jar of spaghetti sauce
1 pound of mozzarella cheese
1 can of sliced black olives (optional)
1 can of sliced mushrooms (optional, or a couple handfuls of fresh mushrooms will work too)
3 roma tomatoes (optional)
Minced garlic or garlic powder to taste

Prepare pasta according to package. Prepare frozen spinach according to package. If you opted to use mushrooms (fresh or canned), toss them in with the spinach while preparing it. When both are done, drain the pasta. Of course you already did this if you were following the directions on the package, but let's face it...once it is boiling most of us toss the bag in the trash. Ok so in a big bowl (or the pot you boiled the pasta in) mix the pasta and the spinach (and mushrooms of course). Stir in the ricotta or cottage cheese while it is still good and hot. Stir in the sliced olives, garlic, and spaghetti sauce (you do not need to heat the sauce first). Stir in half of the mozzarella cheese. Pour this all into a baking dish. HINT: If this seems like too much food for you, pour half in a gallon sized ziplock bag, push the air out, seal, and freeze. Even out the top of the stuff you just poured in the pan. Slice the roma tomatoes and place the slices on top of the stuff. Cover this all with the remaining mozzarella cheese. Bake at about 350 degrees for about 30 minutes. I say "about" because it doesn't have to be exact. Just keep an eye on it and make sure the cheese on top melts but does not burn. Pull it out, turn off the oven, and shove a serving spoon in the pan. Sprinkle with parmesean if desired.

Once you get a taste for this stuff feel free to play with the recipe. DIfferent pasta sauces can be used, such as alfredo or cheese sauce. Cheddar or other cheeses can be substituted for the mozzarella. Avoid processed cheeses as this can make things a little mushy. You can add or remove almost anything from this recipe to adjust for your tastes. The spinach is important though! It contains a good amount of iron which is lacking from many meatless dishes.

Broccoli florets are the part of the broccoli at the top that is darker. Basically the part that is not the thick stalk. Mozzarella is a white cheese. It is the cheese commonly used on pizza and in string cheese.

Made a pretty delicious pasta tonight from odds and ends.

I sauteed frozen corn, broccoli, and black beans with some of the black bean juice, salsa, frank's red hot, and a little fajita seasoning. Added some cooked fettucine, and sauteed until the flavor permeated throughout. Served with cheddar cheese on top and extra frank's. Some sour cream probably would have been perfect, but I didn't have any. The broccoli was a little weird addition, but I liked having some crunchy green veggie in there. Very delicious, and a little different from the same old Italian.

Green lentil shepherds pie

250 g green lentils, soaked over night in water
1 chopped onion
garlic to taste
2 chopped carrots
broccoli, sweetcorn, mushrooms, anything you might wanna use, as long as it is finely chopped.
half a cup of a vegetable stock

4 large potatoes, boiled and mashed
little cheese to sprinkle on top.
Spices whatever you like, i usually use grated coriander seed, garam masala and a little turmeric..

Heat up a spoonful of oil in a frying pan, fry your spices a little to release the flavour, if you are using spices, add onion, fry till just a little golden, add carrots and all the other vegetables you are using. Fry for about 5 mins then add the drained lentils and add the stock and saute on a small heat for another 10-15 minutes (depending on how you like your veggies), stirring occasionally.

Meanwhile heat up the oven and once the vegetables and lentils are ready, spoon them into the ovenproof pan, covering the bottom of the pan evenly, then spoon the mashed potatoes on top, spreading evenly ans sprinkle with cheese. Cook at a medium heat for about 25 minutes.

Pineapple (1 tin in juice)
Ginger (fresh 3/4 inch)
Bayleaf
Pepper Corns (crushed lots)
Onions (2)
Garlic (3-4 cloves)
Coconut Milk
Lemon Grass (2 stems)
Saffron
Olive Oil

Remove jewelery and marinate the - ahem - "Pork" (cubed) in the pineapple juice, ginger and 1
crushed clove of garlic and bay for about 2 hours.
Heat oil in pan, add chopped onion and rest of garlic, fry till soft.
Add meat and brown.
Add coconut milk, pineapple and marinade with lemon grass chopped. Reduce
down over about 1 hour, add saffron 15 mins before end of cooking. If you
want it hotter add a chilli or two at the beginning. It should be served
with lots of rice.

Ooo, I'll have to keep an eye out for it! I dunno if they make it here; I've never noticed it before, but I'll keep an eye out on it. Hmm.

See, I just found out before I wrote it that we've got like 4lbs of frozen minced beef in the freezer, for some reason.. :run:

TVP is an alternate option, though if you can find the faux ground meat, I think you'd prefer it.
