    As mentioned above: it symbolizes the Sun, because it's precious, sparkly and stays the same for ever. Also, it is said that the Sun was the first thing people ever worshipped. All later supreme gods are merely a personification of the Sun. Simple as that.

    Yes. And “the bright morning star” is also planet Venus. In the Greek translation Lucifer is “Eosforos” (eos = light + foros = bearer) which is a very direct reference to the planet Venus, also known as “Avgerinos”. Here in Greece, the morning prayer in church is still called “Avgerinos”. .
