A lean steak should be properly introduced to the grill. "Mr. Grill, meet Mr. Steak." *turn* "Mr. Steak, meet Mr. Grill." Let it sit on the grill at the side for a few moments and serve.
A t-bone steak otoh, marbled and with fat at the side has to be well done. The fat has to be seared.

I can sear the fat without ruining the meat. But rendering the fat does improve a steak.

It still bothers me that something dies needlessly to be eaten by me.
Let me try to assuage your conscience a bit. Beef cows would not even be alive in the first place if people did not eat them. As a population they need some of them to be eaten to live in the first place.

I don't eat meat anymore but still went for Well Done on the poll because that's how I used to have it.

To be honest though, that doesn't quite express how I liked my steak. Well done implies that the steak was brown all the way through which just isn't cooked enough for me. All meat, steak included, should have blackened bits around the edges. You need some crunch and a slight charcoal flavour to it.

Some men just want to watch the steak burn.

Blue for me. Just sear the outside as long as it's a good piece of meat.
I make carpaccio that way. Sear a piece of fillet all over, then cut 1cm thick slices and press and spread each until it becomes a thin and lacy sheet. Drape over rocket/ frisée, season, squeeze lemon juice over then olive oil and Parmesan shavings.

But otherwise a point, which more or less translates as medium rare, i.e. pink inside with bloody juice.

No, you are apt to get it juicy and flavorful. Those rosy colored juices are not blood. That is misconception that meat abusers often have. Why even order a steak if you do that to it? Some of the tougher cuts of meat that need to be cooked for a long time have a lot more flavor than a steak that has been ruined.

Some day you should try some oxtail. Or beef shank. Both good cuts of meat, if you cook them low and very very slow.
It tastes better cooked, and since restaurant meat is mystery meat...
My one kid always said I burn the deer steak over the fire . but a little charcoal is good for you.

I used to eat them well done. Now I do medium well.

I like the crusty aspect of a well done steak, but I'm learning to appreciate the juices as well. :)
