Pork versus Goat !

Twilight, not bright nor dark, good nor bad.
The animals that are slaughtered so man can get meat, has a life too, So it is the killing of the animal that is immoral. a lump of meat is just that, meat. But to decide that someone should die just to feel humans with meat, that is disgusting.
But don't worry, no judgment of those who choose to eat the meat. it is just a choice of lifestyle and how much karma from killing, someone is willing to carry.
Does that mean Predators have Bad Karma?

So all omnivorous or carnivorous animals are evil beings, despite their diet being part of their biological nature?

Where is it said that animals are evil? The killing by humans is wrong, that is what was said. Animals act from instinct.

We're animals, too. That said, what force determines what is good and evil and in what proportion the good/bad karma should be distributed?

Disagree on the human is Animals thing.
Karma is the result of the action, words or thought done in the past, that is how one can decide good or bad.

Taste is an attachment, eating means you eat food(nourishment) food is food, it is the killing of the animal that leads to karma.
So killing an animal for food gives a lot of karma.
Not everyone believes this of course.

Indeed it is a cruel world where we have to slaughter animals lives to feed ourselves , animals that are a conscious life that feel and suffer as we do . I do feel disgusted in myself that I do eat meat but unfortunately I was brought up on a meat diet . I often sit and wonder how much hurt animals feel when their loved ones are slaughtered as lost children or parents bring sadness into their conscious souls .
As a meat eater though I really try to not eat meat everyday and I never have large portions when I do . It hurts no person to have vegi days and I would highly recommend cake days as they are certainly a yummy treat .

How much is "a lot" of karma? Who or what determines what action creates positive or negative karma and how much of it?

Growing up eating meat too, but now only eat vegetarian or vegan food :)

Karma is a part of the law of nature. difficult to say how much or how little karma is given in each situation, but killing (for a Buddhist at least) is seen as a very negative action to do and immoral. so should not be done.

What about the microbes that were on the vegetables you've consumed, and are killed by your stomach acids?
 
I personally find most pig products gross, especially luncheon meat and pork chops.

I consider that applies to most foods , some are better than others .

Example - Chicken Breast versus Chicken Leg

etc etc .

I have never tried goat myself but I once watched that Jamie chef guy cooking up some goat ribs and they did look tasty . (sorry vegans understand upbringings) .

Killing on purpose (for human beings that is) is seen as a negative act. Because we can not know if the animal we kill once was a human being (reincarnation)
Well we do need to eat some form of nourishment and the least amount of karma comes from eating vegetarian food.(before you ask, Yes it does create karma too when killing microbes) but it is not done in intention to kill. The intention of killing an animal like elk or a deer is to kill to eat it is seen as morally wrong action.
But maybe it has different rules for non-Buddhists,

How did you manage the change ?

The change took place over a period of time.don't try to stop in one day :) then you can become sick.
The attachments to the taste of meat is often :)huge for meat-eaters, who say, can not eat dinner without meat :) But when the mindset over time say it is better to only eat vegetarian or vegan food, it becomes easier to do the transition.
In the beginning when all meat has been removed from the diet, yes one does feel less energic and mostly hungry because to eat the same amount of calories by vegetarian food, means you must eat more, But actually, we tend to eat too much anyway, so a smaller meal over time is normal :)
But vegetarian and especially vegan must remember to take supplement of B-12 :)
