Boca Chicken Patty parmigian; pasta, cannelini beans and escarole; a small salad of tomato, chick peas, feta and blue cheese crumbles, and black olives; fresh strawberries. A completely vegetarian meal.
Vegetarian chili with blue tortilla chips. For dinner today, mushroom crepes, along with home-grown red-leaf lettuce, tomatoes, and onions with vinegar-olive dressing.
Today, I'm eating what I grew up with in regards to my Swedish heritage: cream of potato soup for lunch, and salmon patties with a lemon-dill sauce for dinner and a salad with raspberry vinegarette.
