Yeah, Cisco is loaded with polyunsaturated fats. Or at least it used to be. That would have come in last in the contest. Or perhaps cocoanut oil might be worse when it comes to heart healthy. I have some Crisco in the house. Why? I don't know.

And her butter pie crust was also unbelievably good. Even a pie from the best bakery totally sucks in comparison.
Having a good baker in the family is a big win.

I have to admit lard makes good savoury pastry. My grandmother made a mean steak and kidney pie and the pastry had lard in it. Then lard became the devils food and got replaced by vegetable oils. Turns out our grandparents had it right.
I still save all my bacon grease. Its good to cook with. Its almost become the new survival tool.
It was very popular in WW2

That's where I dropped the ball. I didn't get any of my mother's recipes that she got from her mother. I hope my sisters did.
My brother and his family are largely vegetarians. But they sometimes have me come over and cook "Mom Spaghetti" or "Mom fried chicken".

Now the fried chicken is pretty good and fairly healthy. It is a shallow pan fried chicken that is very light on the oil. "Mom spaghetti" is a bit like mac and cheese. Easy. And it is definitely comfort food. But it won't win any awards. But now I am craving some.

I use if mainly for two things. Eggs fried in bacon grease are very tasty. And I have realized since it is almost "lard' it is probably not that bad for you. And when I make chili con carne I will use very "healthy" low fat ground beef. It is so low in fat that not only do I not drain it, one has to add a little to the pan. So I use bacon grease for that extra bit of flavor.

Bacon is far too expensive if one throws away that wonderful grease.
