I've always assumed I just need more opportunities and I'll be fine, but I'm starting to worry that because I have long struggled with getting past job interviews more opportunities won't be enough.

Confidence is key. If you can do the job, show it. An interview is your sales pitch to sell you. A long time ago I was in an interview for a job I really wanted, and at the end of the interview, which I didn't think had gone well, I said "I know this is my chance to show you why I should be the one to get this position, so let me say...." and then spent 5 minutes explaining how I had skipped grades in school, never missed work, was first in my class in everything, and was motivated to have this job because it was the exact right fit for me, and I for them. I got the job. Believe you're the answer to their prayers, and they'll believe it, too.

I once told a potential employer (for an engineering job) about my school achievements,
my attendance record, & my work habits, & where I excelled. I didn't get the job, but he
asked me to unclog the toilet in the women's room. And I was a success!

I think next I'll just tell them I'm crap at coming up with things on the spot but once I have the job, and time to consider things, they'll be hard pressed to find someone who's going to consider every last detail like I would.

Write down all of the qualities you wish to present ahead of time. Use them to create a monologue. Write it down! Practice it in front of a mirror. Deliver at end of interview.

As a former hiring manager, I'd want you to also include examples of when you did just what you described. I once got a job, in part, because when I was asked if I knew a particular piece of technology I said something like "I really don't but these are the concrete steps I would take to learn it". I don't remember if I added but I may have "and in my past when I had to learn XXX, I did it this way..."

I can't remember if you have had an interview coach, but I think that would help as well so you can practice and get feedback.

I can't remember if you have had an interview coach, but I think that would help as well so you can practice and get feedback.
At the career center at school, I'm told I do just fine with their list of predetermined questions that aren't often asked at a real interview, the most routine of questions that are easy to script, or are so hopelessly open ended (due to it being a mock interview) that you can pull anything out of the air and have it sound good (they also tell me my attire is good). I'm supposed to be getting help with interviews through voc rehab, but that has been so much nothing that I forgot all about it until I got a letter the other day saying their office is moving. Which leaves me with my "regular" therapist, and while she is helping me with communication skills, in terms of landing employment things just haven't been improving.
As for an actual interview coach, I don't think we have those around here. (I just did a Google search, and couldn't find any) Nor do we have career coaches/councilors, and the same goes for job recruiters.

I just realized dinner tonight will not be cooked fully or right because my mom doesn't know putting multiple things in an oven at once creates cool spots and causes uneven cooking.

The fact this sounds decent, good maybe even, on an otamatone is probably the greatest bit of evidence Judas Priest did not want people to kill themselves, and it's best to not take metal too seriously.
