Ever since my husband almost left us suddenly this January and thanks to the medical advancements we have today which have saved his coronary arteries, we are both on quite a health kick - a new lifestyle actually. So....I have been looking up new and healthier recipes. I found one or two for Stuffed Sweet Potatoes. I took the recipe as a guide and just winged it from then on. The result: I was beaming as hubby wouldn't shut up about how good they were.
Two sweet potatoes: baked for an hour and then cut in half. Scoop out the insides and put in a medium sized bowl.
Meanwhile, while the potatoes are baking, cut up a small onion and with a little olive oil, fry them up. When the potatoes are almost done, throw in some baby spinach into the pan (I used a healthy handful) and some grape tomatoes cut in half, and some chopped pecans. If the spinach doesn't wilt right away, add a bit of water. Stir everything together.
Pour the onion/spinach mixture into the bowl with the potato pulp, add about a half a cup of goat cheese and mix well. Then scoop out the mixture and place even amounts into the four potato shells. I put a dob of goat cheese on top of each one and back in the oven for a few minutes to heat up. You could add skim mozz cheese on top too. Or sprinkle with parmesan.
Eat and enjoy. Simply yummy! These potatoes are a meal in itself, but we cooked up a couple of skinless, boneless chicken thighs to go along as well.
And for dessert, we had chocolate tofu pie with ground flaxseed in the graham crust!
