Been there done that. Olive oil and eggs separately are fine, combined they are disgusting.
If you just toss them together, of course they are. There is a bit of an art to mayonnaise making. And you might want to try a more neutral oil For the most part EVOO is my go to favorite. But for Asian cooking or if I ever deep fry, which is very rare, you need something else. A neutral high smoke point oil of some sort.

Oh, I did not know that Australia was a third world country. I am so sorry.

My father liked a BLOT. He would add a healthy slice of onion to his.
My mother would eat a slab of limburger cheese and a slice of fresh onion on rye bread. I've tried it and found I like it. No mayo.

What's summer in Seattle? -20c?
It is actually sunny and over 20c. The amount of rain from July to the end of September is almost negligible. It is a well kept secret. The summers to not get hot. People complain if it gets into the 80's. That is 27 for you. I even heard a guy complain that it was "too hot" when it was 21 C. I grew up elsewhere. It would hit 35 C every summer and -30 C every winter. We had a healthy temperature range. So if people complain about the heat or the cold here I just laugh at them.
